
The taste of the world on one plate
After a year and a half, he set off in search of new experiences in Italy — specifically to Sardinia, in the city of Olbia. He started from the bottom but worked his way up to the position of grill chef in a prestigious restaurant. It was there that he fell in love with Italian cuisine, fresh seafood, and the focus on seasonal ingredients.
After returning to the Czech Republic, he completed his studies and continued his culinary journey — this time in Malmö, Sweden, and later in Düsseldorf, Germany. Over several years, he gained extensive experience in various international restaurants, which allowed him to develop a unique style — based on the contrast of flavors, vibrant colors, and a keen eye for detail.
Since 2016, he has been permanently back in the Czech Republic. He cooked in Brno, Pardubice, and Plzeň, where he served as head chef. In 2025, he settled once again in Brno — this time at Jazzmin, where he brings his passion for Italian and international cuisine straight to your table.
Today, Jib creates a culinary experience that connects the world — with an emphasis on seasonality, modern trends, bold flavors, and a distinctive dining experience. As he himself says:
